Nashville Unleashed Returns! Audition to Perform with the Artisits!

The Nashville Unleashed country music tour is returning to The King and Prince on November 12th. Jack & Diane, creators of Nashville Unleased, are back with a couple of Nashville performing songwriters, Justin Zimmer and Mark Stephen Jones. The event will be on November 12th in the oceanfront Delegal Dining Room at The King and Prince Resort.  Doors open at 7 PM and tickets cost $40 and include gourmet dessert. Compete for a chance to perform a song with the Nashville Unleashed artists!  Auditions will be at Open Mic Night at Palm Coast Coffee Cafe in the Village on St. Simons on Monday November 7th at 8:30 PM.  Eight finalists will be chosen for the final auditions on November 12th from 12-2 PM at The King and Prince Resort.  The winner will get to perform with Nashville Unleashed that evening and receive a song writing session with the artists! You must be a songwriter, play acoustic guitar and sing country, blues, jazz, folk and/or adult contemporary. Brunswick Stewbilee in Brunswick, Georgia

This past weekend, The King and Prince Resort competed in the annual Brunswick Rockin’ Stewbilee.  The event was on Saturday October 22 at the waterfront Mary Ross Park in Brusnwick Georgia (15 minutes from the Resort).  There were numerous festivities all day long.  The kick off was a one mile fun run and a 5K.  Following this was the “Pet Supplies Plus Pooch Parade.” Owners showed off their pets in a variety of creative costumes.  An employee of the King and Prince, Amanda’s pet won first place in the small dog category for being dressed as an Animal Cracker.  It was adorable! There was live entertainment all day and of course the main attraction, the brunswick stew contest!   There were 32 cooking teams that supplied their stew for the competition.  We served up over a thousand samplings to attendees.  It was our first time competing in the contest and are proud to say we were a finalist!  Our stew (and decorations) were definitely first place in our book!

Shrimp & Grits Festival on Jekyll Island, Georgia 2011

The King and Prince Beach and Golf Resort participated for the very first time in the Shrimp and Grits Festival on Jekyll Island. The event was three days long from September 16th to 18th and began with a $3 sample night on Friday. Live music continued all 3 days with arts and crafts vendors as well. There were thousands of people who attended, it was kid friendly and had a great vibe. The festival is held at a perfect time of year and is located on the gorgeous, historical grounds of Jekyll Island. The King and Prince served up Shrimp & Grits in a Tasso Cream Sauce all weekend long and it was fabulous! We were thrilled that our recipe was liked by all and are looking forward to serving it in our restaurant in the near future. Our Food and Beverage Director, Vinny D’Agostino and Executive Chef, Robyn Gomez are very excited about entering the cooking competition next year and hope to see you there. Bourbon Tasting at The King and Prince

Vinny D’Agostino thinks it is high time that bourbon reclaimed its rightful place as “America’s Native Spirit,” the title it was awarded in 1964 by Congress.

“I want people to be educated about bourbon so that they can really appreciate what a unique spirit it is. There’s so much history there, in how bourbon is made, from the charred white oak casks that give it that distinctive color and flavor, to how the art of distilling it was nearly lost during Prohibition.”

Reinvigorating a passion for former glories is “on the menu” for Vinny, who joins the King and Prince family as its new Food and Beverage Director from the Sawgrass Marriott Resort in Ponte Vedra Beach, Florida, and he hopes to see the storied Kings Tavern Restaurant mirror its heyday when the island social scene made its hub in the Tavern’s oceanfront venue. A big part of that plan for restoration, as Vinny sees it, is hosting events like this bourbon tasting.

The event itself, hosted by Vinny with hors d’oeurves catered by the King and Prince kitchen, featured a little over fifteen in attendance, a mixed crowd of both guests and locals. It was held in the Retreat Room, one of the King and Prince’s many meeting venues, which features stunning ocean views. The tasting featured labels included Four Roses, Buffalo Trace, Knob Creek, Bakers, Evan Williams, Blantons, and Maker’s Mark. Attendees enjoyed a brief lecture on the history and roots of bourbon, from the Whiskey Rebellions of the 1790’s, to the rise of bourbon as America’s spirit of choice in the 1960’s, and to its eventual fall from grace at the hands of James Bond’s vodka martinis (shaken, not stirred) in the 70’s.

Attendees also learned the finer points of tasting spirits, starting with smelling the alcohol, experiencing the bouquet, and identifying the base. After each tasting, group discussion revealed varied reactions to each individual label, but overarching themes became apparent.

The bourbon tasting was finished with a King and Prince creation: bacon-infused bourbon. Both surprising and tasty, the spirit seemed to be a crowd-pleaser, but was quickly overshadowed by a surprise treat from local island ice cream shop, Moo Cow Creamery: candied bacon ice cream, and as if that sweet treat wasn’t enough to finish the night, Vinny introduced one final cocktail of the night, one of the King and Prince’s signature offerings: The Whiskey Smash, whose recipe is included below.

As the evening drew to a close and the buzz of excited conversations filled the room, Vinny offered one last bit of advice: to consider bourbon in all its storied past and history the next time you frequent your favorite bar or go to stock your liquor cabinet. As a true piece of classic Americana, bourbon, not unlike the King and Prince Resort, is always a safe bet for a good time.

2-3 Lemons

1 oz simple syrup

2 sprigs of mint

1 oz of water

Muddle the ingredients in a shaker.

Add 1 ½ oz. of bourbon

Add ice, shake to mix, strain and pour.

Sometimes there’s nothing as exciting as discovering unique shopping areas in a destination you hadn’t expected would offer so much. St. Simons Island, about a one-hour drive from the Jacksonville, Florida airport, is such a place.

A high-scale island that caters to families who want an affordable vacation (a stay at the King and Price Beach & Golf Resort is the place to be), and is home (seasonal) to the Fortune 500 crowd, it was surprising to find affordable, unique pieces in trendy shops throughout the downtown area. But that was but one small perk in a recent visit to the 18-mile long island — with a population of 21,000 seasonally.

The culinary scene, which is trendy and not just about shrimp ‘n grits (although there are plenty of these sweet island tastes at almost every eatery), includes top restaurants such as Halyards, serving the freshest and tastiest tuna tartare with citrus aioli, as well as offering cooking classes through its USA Island Cooking Classes program. The drive to Halyards is your first course for dinner, aesthetically speaking, as the road that leads to this eatery is a tree tunnel of old oak trees accessorized with Spanish Moss. In business for 11 years, Chef Dave Snyder is one to watch, especially when he’s kneading his own cheese curd and water to make fresh mozarella. While Halyards is a bit more of an upscale dining experience, Chef Dave offers a scaled down version of more affordable tastes at his neighboring Tramici restaurant. And then there’s Palmer’s Village Cafe, the newest spot in town for breakfast and lunch, where Chef John Belechak serves southern specialties that will tempt you to return over and over again. If your in the mood for some low country pub food, head to Saltwater Cowboy and you’ll “git” your fill. Learn firsthand about the shrimping industry of the island onboard the Lady Jane, an absolute must for those who want to be in-the-know.

Not sure what else to do while on the island? Take a tour on the Lighthouse Trolley with “Cap” Fending and you’ll learn about life on the island, with personal anecdotes from a man that once ran for the presidential election, but now relishes in a life of sharing his experiences and knowledge of St. Simons Island through group tours on the trolley, as well as dolphin and fishing excursions. If you want to know more about the history of the Georgia Coast, you can head to the Coast Guard Maritime Museum and get your fill, courtesy of Curt Smith, or hop on a bicycle and get lost in the island’s surrounding beauty of beaches and residential areas. Ocean Motion offers kayak rentals and bicycles with baskets and locks so that you can cruise along 21 miles of bike paths! Oh, and it also has a great sports shop and clothing store.

Need to sweeten things up a bit? Head downtown to St. Simons Sweets and grab a pecan, Rice Krispie treat — or two.

If you, or someone you travel with loves golf, a must go-to spot would be the King & Prince Golf Course, a championship course that’s worth a golf cart drive through just to witness the beauty of the landscape.

Need a bit of culture? You’ll be sure to get your fill at the Left Bank Art Gallery, especially if you stay and chat with owner, Mildred Huie Wilcox, a southern belle who will leave you in awe with stories from her past experiences living in New York City as a fashion model, and stories of life on the island with her late-husband.

With so many treasures to experience on St. Simons Island, this is a destination worth exploring.

Swampscott —All the hype leading to the royal marriage between Kate Middleton and Prince William of Wales is likely to evoke the need for a bit of grandeur in your own life. So, if you’re in need of getting the royal treatment, there’s an affordable destination with a five-star golf course and staff that will treat you like crowned royalty — and you’ll be in surroundings fit for a king.

Lined with oak trees over 200 years old, it’s the Spanish moss that will grab your attention. Draped on limbs that “bough” down to greet you with southern hospitality, and streets dotted with blooming azaleas, roses and more floral landscape, St. Simons Island in Georgia spans 18 miles along a salt marsh that keeps sweet Georgia shrimp happily fed and spawning. Although peaches are what come to the minds of most when this low country Southern state is mentioned — on St. Simons Island, it’s all about shrimp. In fact, Georgia has the largest marshland in acres and is the largest producer of seafood on the eastern coast.

Shrimp with grits, peel ‘n’ eat boiled shrimp, fried shrimp — whatever y’all are in the mood for, you can get it at St. Simons. If you’re not sure how you want your shrimp prepared, or want to try other seafood tastes of the area, such as grouper or flounder, head to King and Prince Beach & Golf Resort, a family-friendly, affordable spot on the island for the Friday night seafood buffet; you’ll be guaranteed to get your fill of seafood, as well as prime rib and an assortment of desserts, such as peach cobbler, of course.

Paula Murphy, sous chef at KP, knows her grits (acronym: “girls raised in the south”). Murphy advises seasoning grits as you cook them — don’t wait until they’re fully cooked or “they won’t work,” she says. Cooking lessons are part of KP’s offerings, held in spacious rooms with windows that overlook the sea. During high tide, the beach disappears and all you see is water (you’ll feel as if you’re on a cruise ship, but without the seasickness).

A walk, bike or Lighthouse Trolley ride off-resort will lead you to the Left Bank Art Gallery, where owner, Millie Huie Wilcox, upon request, will regale you with stories of her life, including her past fashion modeling career in New York City, as well as how she came to own an art gallery on St. Simons Island. The artwork, some of which features artists from France, hosts plenty of talented regional artists (my personal favorite: Jane Smithers of North Carolina). Following a fill of culture, be sure to take time to explore the fantastic shopping districts for women, and take a break at Palmer’s, the newest breakfast and lunch eatery, a must-stop for visitors who want to experience a taste of the south. Try the Southern poached eggs with collard greens accompanied by a ham and buttermilk biscuit topped with pot licker gravy, or Mary’s chicken salad sandwich with the hollowed Hoagie filled with ricotta cheese and sun dried tomato chicken salad. Hey, even the Texas-cut French toast stuffed with a strawberry cream will more than satisfy the ficklest of foodies.

Until you reign at the King and Prince Beach & Golf Resort, here are a few shrimp recipes that will catapult you down south.

 Shrimp and Grits

Burgundy gravy:

1 lb. shrimp (26-30 count)

3/4 cup sliced mushrooms

1/2 cup julienned red pepper

1/2 cup julienned green pepper

1/2 cut julienned onion

8 beef bouillon cubes

1 quart water

Dash of salt

Dash of cayenne pepper

4 oz. Burgundy wine

Sauté onions, mushrooms and peppers in butter. Add wine and bring to a boil. Add salt and cayenne pepper, re1duce heat. Add shrimp and simmer for 5 minutes. Add beef bouillon cubes and mix well, add water and bring to a boil. Thicken with half cornstarch and half water mixture.

Cheese grits:

2 cups stone ground grits

1 quart chicken stock

1 quart milk

1-1/2 cups Monterey Jack cheese

1/4 cup water

Bring chicken stock and milk to boil. Add grits, cook for 5 minutes. Add cheese, reduce heat and simmer for 5 minutes. Add butter, stir well and cook for 10 minutes.

Serves 6 to 8

Shrimp & Crab Seafood Lasagna

2 cups wild shrimp (preferably from Georgia), medium size, defrosted and dried off on paper towels (you can also use/add crab, scallops, etc.)

1 garlic clove, minced

3 scallions cut in 1/2-inch pieces (greens included)

2 tablespoons parsley, chopped

1 tablespoon butter

1-1/2 cups béchamel (when making sauce, use only 1 cup)

1/4 cup heavy cream

1/2 cup dry white wine

Few threads saffron

Cayenne pepper (optional, to taste)

3/4 cup Fontina, provolone and mozzarella cheese mix, shredded

1/2 cup freshly grated pecorino or Parmesan cheese

8 lasagna sheets, cooked “al dente”

Salt and ground black pepper

Preheat oven to 375 degrees.

In a saucepan, melt 1 tablespoon of butter, sauté the garlic until transparent — do not brown or burn. Add the shrimp and toss over high heat for 1-2 minutes. Add scallions and parsley, stir and continue cooking until shrimp lose their transparency. Remove from heat and set aside.

Prepare the béchamel using just 1 cup of milk as you will be adding the cream and white wine to it. When the béchamel is ready, stir in the cream, wine, saffron, cayenne and salt and pepper to taste. Blend thoroughly and remove the sauce from the heat.

Spread about a third of the sauce over the bottom of an 8- by- 10-inch round pie pan. Sprinkle half the cheese mixture (Fontina/mozzarella) over the sauce. Scatter about half the shellfish evenly over the cheese. Cover with half the lasagna sheets. Repeat the layers finishing with the last sheets of lasagna. Cover with the remaining sauce and Parmesan and a few threads of saffron (and some ground pepper if you wish).

Bake for 30-40 minutes or until topping is golden brown (keep an eye on it — you don’t want the top to burn). Let stand 10 minutes before serving.

Serves 4 to 6

Good Morning Darlings!

I would say that mine is a charmed life. That very fact was confirmed when I was invited to visit St. Simons Island for four days last week. In fact, it was so fantastic that I have deemed this to be St. Simons week on Anatomy of a Dinner Party!

 Arriving after the five hour drive from Atlanta, I entered the lobby of The King and Prince Beach & Golf Resort to the heady aroma of chlorine. Now that might sound funny to some, but to me that is the smell of childhood, of a spa, of…..an indoor pool right in the lobby! Just one of four pools the resort boasts.

I dropped my luggage in the room (oceanfront!) and donned my Wellies (it was a blustery day) for a trip on the island trolley with my 17 journalist companions for the next four days. Destination – The Coast Guard Maritime Museum.

I loved hearing the history of this marvelous building and loved touring it even more. There are films to watch, quizzes to take and relics to pore over. Mr. Curt Smith was a wonderful host and guide and just knows everything about this treasure.

St. Simons gifts were starting to unfold. Next up was a trip back to the resort to freshen up and then time for a very special coastal dinner in the Solarium with Chef Paula and Chris Baker, Director of Food and Beverage.

My room was so beautiful. Appointed in all navy blues and buttery yellow, it immediately soothed me. The king size bed was whispering to me, but it was time for dinner. And you all know, dinner is going to win every time!

In The Solarium, we were greeted again by our lovely host for the trip, Leigh Cort, Bud St. Pierre, Director of Sales and Marketing and Michael Johnson, General Manager. You might think that one in charge of such a stately resort would put on airs, but no. Bud, Michael, Angela, Chris and everyone else associated with the property were the warmest most genuine folks I have ever met. It was my delight to visit with each of them personally during my trip. I promise if you treat yourself to a visit to The King and Prince they will treat you with the same hospitality I so enjoyed.

On to the food! Chef Paula whipped up shrimp and grits in a demonstration as we sipped wine and asked questions. It was also a great time for my fellow writers and I to get to know one another. What started out as 17 strangers, turned into 17 friends before we would leave on Saturday.

Paula answered all our questions, and we had many! The dining room was filled with the most incredible scent as our gracious servers brought around a chopped caprese salad on bread and more wine was poured.

Between the entree and the dessert, everyone got up to introduce themselves to the group and reveal their favorite travel destination. It was so much fun learning about my brand new friends.

I was at an advantage, having my friend and fellow Atlantan, Ava Roxanne, from My Skin Concierge on the trip with us. She answered a quiz about the resort and won a stay in the Tabby Cottage! We would later retire to her cottage with some bubbly and giggle the night away. But first, dessert.

And what a dessert it was! Oh my goodness. Promise me you will visit The King and Prince and order this. Peach cobbled topped with Praline Ice Cream. It will make you the happiest person on earth. Seriously. Have I ever lied to you? Of course not. Take a look.

The historic King and Prince Beach and Golf Resort is the only luxury hotel on beautiful and charming St. Simons Island, GA, located 60 miles north of Jacksonville, FL; 65 miles south Savannah, GA. It is situated at the southeast end of St. Simons Island, where the island’s best beaches are. There’s so much going on at King and Prince that their activities merit a separate article.

Now in its 76th year, the King and Prince is listed on the National Registry of Historic Places and a member of Historic Hotels of America.

Guest Rooms

On arrival, we were greeted at a hotel reception desk and shown to our room.  The room was spacious and very well furnished with a comfortablesofa, coffee table, a work desk with two chairs, a big flat-screen TV, a DVD player, a room safe and a bed, of course. The bathroom was huge and the toiletries provided were beautifully presented in environmentally friendly packaging.

comfortable both for snacking and for being able to use our computers outside. The resort offers complimentary Wi-Fi throughout so this was very handy, as it enabled both of us to go online at the same time.

For those who don’t take their own computers everywhere with them, the resort also provides a business center where guests can go online using the resort’s computers, which are equipped with printers in case you need to print anything out.

During the check-in process we were given an attractive map of the resort to help us get oriented. As well as the guest accommodation, there are several public areas for guests to eat, drink, and play, or just sit quietly enjoying the superb views of the white sandy beach facing the Atlantic Ocean.

There is an array of guest accommodations (including seasonal and special discounts) for every style and budget:

  • Resort Guest Rooms Located in the historic buildings with ocean, partial ocean or resort views, the resort’s most economically-priced guest rooms offer one king or two queen beds, yet offer the luxurious décor.
  • Beach Villas and Guesthouses:  These two- and three-bedroom villas offer a patio or balcony with either an ocean front or partial ocean view, combining living and dining room and a fully equipped kitchen with place settings for eight. Both the North and South Villas include their own pools and separate gated parking areas. 
  • Resort Residences:  The King and Prince presents these seven gracious Guest Homes, each with its own highly unique ambiance and features.

The resort has three swimming pools:  A heated indoor pool and hot tub, and two outdoor pools.

Dining

The historic Delegal Dining Room, famed for its stunning stained glass window murals and ocean vistas, hosts the resort’s “Southern Charm Sunday Brunch” as well as the Legendary Friday Night Seafood Buffet and other holiday buffets.

The other restaurants:

  • The Atrium Café Opens daily at 6:30 a.m., featuring Freshly Brewed Starbucks Premium Coffees, Tazo Teas, fresh fruit, pastries, juices and energy drinks. Allowour baristas to assist you in your wake up process each morning;
  • The King’s Tavern is open daily for lunch and dinner and offers the only ocean front dining on St. Simons Island. Offering a delicious selection of fresh local delights, dine ocean side choosing from chef inspired soups, salads and sandwiches or try the signature Low Country Shrimp & Grits,
  • Paradise Beach Bar and Grill Open daily at 11:00 a.m. March through October weather permitting.  This is where island time truly begins and where food and fun become one. This is ocean front dining at its best. Enjoy an ultra-casual lunch with a wide variety of choices, as well as their signature cocktails like the King & Prince Lifesaver or the Confusion in Paradise.

As you can see, the resort has everything for those seeking tranquility and, as you’ll also see from my next articles about leisure activities and dining at the King and Prince, there’s lots to do. However, it’s worth a mention that the resort does not only cater to vacationers. You can also do business in this amazing environment.

There is more than 10, 000 sq. ft. of ocean front meeting, conference and function space, with premier catering, wedding, and special event services. The Sydney Lanier Ballroom can accommodate 70 to 350 people and offers teleconferencing, as well as state-of-the-art audio and video facilities.

Finally, it’s definitely worth mentioning the staff. The staff was truly excellent. They did everything they could to ensure the comfort of their guests, and I really couldn’t praise them highly enough.
I had spent four days at the King and Prince Beach and Golf Resort in St. Simons Island, GA, fine dining at a fantastic hotel restaurants, touring the island and making new friends with the local residents I met in the village.  My nights were spent in the newly renovated room cushioned in a king-sized bed in the resort’s Oceanfront Building featuring dramatic floor-to-ceiling windows and a balcony overlooking the resort’s pools and the Atlantic Ocean.

On this last day I sat alone on the steps leading to the beach on the shore of the Atlantic Ocean.  In the pre-dawn darkness, a cup of coffee in hand, I anxiously waited to greet the day.

The clear, starry sky had whispers of clouds.   The air was absolutely silent, but filled with the salty smell of the sea.  The deep purple night gradually gave way to shades of red.  Day was at last beginning.

As the sun rose, the first sight was the arc of yellow shimmered on the ocean like an impressionist’s painting.  Sea birds and people seemed to show up at the same time.  I caught sight of baby dolphins coming up for air as they made their way out to sea with the ebbing tides.  Flocks of geese made their way north in their famous v-formations.  It was the perfect end to a perfect vacation.

All in all, if you’re planning a luxury holiday in the Georgia Sea Islands I suggest you look a bit further than the usual well-known haunts and give St. Simons a try. And if you do decide to visit St. Simons, then where better to stay than the King and Prince Resort?

St. Simons Island is that gleaming treasure.  Choose a five hour drive, or a quick flight from Atlanta, as you travel back to a more gracious era. If St. Simons is the treasure, then the crowning jewel is The King and Prince Beach & Golf Resort. Opened as a seaside dance club in 1935, you feel enveloped in history as you step inside the grand lobby. Overlooking the sparkling Atlantic Ocean, it is not hard to imagine Jay Gatsby holding court while enjoying a gin and tonic at the bar.

A signature dish of pecan-encrusted tilapia in an amaretto sauce had me wishing I had asked for the recipe. If you are looking for a place off-property, try Saltwater Cowboy, just outside the entrance to the resort for delicious steak.
