Resort Executive Chef John Palacio was born in Seville, Spain and grew up in Omaha, Nebraska. After high school he joined the U.S. Marines and soon after completing his time in the Marines he signed up for a five-year chef’s apprenticeship at the Westin Bonaventure Hotel in Los Angeles. Because he was willing to travel to gain experience and advance in his career field, over the past 25+ years he has worked in hotel kitchens in Kansas City, Beverly Hills, Tucson and Chattanooga before moving to St. Simons Island.
He has been married for 22 years to his wife Linda and together they have 3 children; Alexandria, Giovanti & Gulliano who all love to travel.
As a Christmas tradition, the Palacio family starts with everyone helping to make the big Christmas meal for the evening. The kids make pumpkin pie and fresh bread, Linda prepares the vegetables and Chef John makes the entrees. The morning is started with homemade hot chocolate, tamales and Mexican sweet breads. They embrace this time of year to spend time with family and have fun.
Chef John’s Homemade Hot Chocolate Recipe
8 oz. of bittersweet chocolate
1 cup of sugar
2 cinnamon sticks
A pinch of nutmeg
2 cups of water
3 cups of milk
In a small pot, add the water, sugar, cinnamon & nutmeg. Bring to a simmer and then add the chocolate. Stir until it dissolves. With the liquid simmering, add the milk and simmer again. Place marshmallows in your favorite mug, pour in the hot chocolate and enjoy!
