The King and Prince Beach & Golf Resort and ECHO Oceanside Restaurant are happy to welcome Executive Chef John Palacio to the resort. Palacio began his culinary career at age 15 at the Red Lion Inn in Omaha, Nebraska. Following 4 years of global assignments with the U.S. Marines, he returned home to follow his dream of becoming a professional in the culinary industry. His training included a 3 year American Culinary Federation apprenticeship at the Westin Bonaventure in Los Angeles which concluded with him being awarded the coveted American Culinary Federation’s “Apprentice of the Year” in Los Angeles County.
He gained his vast experience by traversing the country in several Westin resorts from Santa Clara to Kansas City to Tuscon to Beverly Hills and even catered to the stars at the Emmy Awards in the late 1980’s. When he is not in the kitchen, Palacio can be found outside in his tomato garden or canning his tomatoes.
“Each day I want to personally meet our guests to let them know I am available to make their visit memorable ~ from a birthday party or wedding reception to their casual dining experience filled with culinary surprises. I am elated with my choice to take the Executive Chef position at The King and Prince Beach & Golf Resort.”
Hotel Director and General Manager Michael Johnson states, “We are very excited to add someone with so much talent and expertise to our team. We look forward to introducing Chef John Palacio to our community as the overwhelming response to our new food and beverage concept ECHO for dining and catered events continues.”
