		<description><![CDATA[Banana Crunch Muffin
Makes 6 Texas size muffins

Preheat oven at 325’
Bake for 25-30 minutes
Prepare  extra-large 6 muffin tin. Use paper cup or grease and flour the tin.

Topping
½ cup sweetened flaked coconut
½ cup rolled oats
½ cup chopped walnuts
¼ cup flour
½ cup firmly packed brown sugar
3 tablespoons butter, melted
In a large bowl, combine coconut, oats, walnuts, brown sugar, and flour. Stir in the melted butter until well mixed: set aside.

Flour mixture
1 cup flour
¼ tsp. salt
1 tsp. baking powder
¼ tsp. baking soda
In a bowl combine all ingredients above, set aside

Batter
2 medium size bananas’ mashed
½ cup sugar
¼ cup oil
1 large egg
½ tsp. vanilla
1 tsp. cinnamon
½ cup chopped walnuts
In a bowl mash the bananas add the sugar, oil, egg, cinnamon and vanilla. Beat vigorously until frothy, fold in the flour mixture until well blended.  Add the walnuts.
Put the batter in the muffin tin, and put the topping on the batter and push it down lightly into the batter.]]></description>
